The recently shuttered The Edge restaurant on County Line Road (near Benetts Mill) in Jackson is set to undergo a dramatic transformation, with plans in motion to convert the space into a kosher dairy restaurant named “Pescada,” complete with a simcha hall for events such as brissim. Developers are also seeking to expand the existing structure to include a series of retail stores, effectively turning the standalone building into a strip mall.
The Edge, which first opened in 2019, made a name for itself by offering modern American cuisine in a 200-seat venue that was unlike anything else in Jackson. Built by Phil and Louise Cornick of Colts Neck, the restaurant promised “amazing food and incredible spirits,” featuring a team of high-profile hospitality professionals from New York and New Jersey.
But after nearly six years in business, The Edge has closed its doors. “After so many unforgettable years, The Edge will be closing its doors,” read a farewell message posted to the restaurant’s Instagram page. “We’re endlessly grateful for every guest, every team member, and every moment shared with our Jackson community.”
Now, a new chapter appears to be beginning for the site. With the area’s Orthodox Jewish population steadily growing, the plans for a kosher dairy restaurant and simcha hall reflect a changing demographic. If approved, the adjoining retail expansion would reshape the property into a modern commercial hub along North County Line Road.
